Don’t get me wrong, Christmas dinner is great. There’s tons of sides, a couple of meats, tight pants; it’s good. But after Thanksgiving my thirst for belly busting meals wanes a little. Instead I quench my thirst, for the most part, with apps on apps on apps.
During the holidays my mom turns the dining table into a grazing station to end all grazing stations full of delicious appetizers and snacks. You’ve got your sausage balls, your mini pecans pies, your white Christmases (sweet, Chex Mix party mix). With all these options, every trip to the table feels new and inviting each time.
For any successful holiday grazing station or appetizer plate you’ve got to have a ball. They may be old school but party balls are a real crowd pleaser (insert Schweddy Balls joke). We always have a sausage ball and a salmon ball (shredded salmon mixed with cream cheese and horseradish rolled in pecans) but this time around I went with a pimento cheese ball.
Who doesn’t love pimento cheese? Form it into a huge ball and roll it around in pecans and you’ve got yourself a holiday party magnet.
1 cup shredded yellow sharp cheddar cheese
1 cup shredded white sharp cheddar cheese
4 ounces cream cheese
¾ cup Duke’s mayo
2 tablespoons grated onion
½ teaspoon smoked paprika
1 teaspoon garlic powder
A few dashes of Texas Pete Hot Sauce
½ cup pimentos
½ cup crushed pecans
1. Add all the ingredients, except for the pimentos and pecans, into a food processor. Give the mixture 3-5 pulses and stir in the pimentos. Refrigerate the mixture for 30-40 minutes.
2. Lay about a 10x10in sheet of plastic wrap onto a clean countertop. Add the chilled cheese mixture to the center of the sheet and gather all four corners of the sheet together. Form a cheeseball by twisting the entire mixture like you’re trying to change a light bulb. Refrigerate for 30 minutes.
3. Sprinkle the crushed pecans onto a clean surface. Take the cheeseball out of the plastic wrap and roll in the pecans until the ball is completely covered. Grab your favorite crackers and get the party started!
